Quick and Easy Coconut Macaroon Recipe

Sometimes you need something sweet. A little treat that you don’t feel bad about and something that’s super quick to make and bake.

I had some left over coconut flakes and decided it’d be fun to try something new. So try it!

The best part about these little guys is that you can add your favorite treats like dark chocolate chips, cocoa powder, sliced almonds… Whatever you want!

Gather:

2-1/2 cups – Unsweetened Coconut Flakes.
1/2 cup – 3/4 cups of Nectresse sweetener OR 3/4 cup of sugar.
2 egg whites.
1/2 teaspoon of almond extract.
1/2 teaspoon of pure vanilla extract.
Dash of salt.

Do this:

Pre-heat oven to 325°. Line a baking sheet with parchment paper. Mix all ingredients into a large bowl. Get on in there with your clean hands and combine everything.

Once combined, take a heaping tablespoon of mixture and place mounds onto baking sheet about an inch apart. Bake for 16 – 18 minutes or until golden brown.

Your kitchen will smell glorious. I promise.

Let these puppies cool (or eat them piping hot.) and share with your friends… or not!
